Vegan Queso Dip
Serves 4

Ingredients
- 1 cup gold potatoes, peeled and cubed
- 1 cup carrots, peeled and cubed
½ cup raw cashews (soaked in warm water for 20 minutes) - ½ cup plant milk
Juice of half of a lemon (~1 tbsp) - ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp smoked paprika
- 1 tsp sea salt
- ½ tsp cumin
- ⅛ tsp cayenne (optional, for an extra kick)
- ½ - 1 jalapeno, deseeded and diced (adjust to desired spice level)
- ½ tbsp coconut aminos
Instructions
Steam the potatoes and carrots until fork tender. Meanwhile, soak the cashews in warm water for 20 minutes.
Add all the ingredients into a high speed blender and blend until smooth and creamy!
Enjoy as a dip, sauce, or cheese topping!
