Lemon Balm Kitchen

Vegan Queso Dip

Serves 4

Ingredients

  • 1 cup gold potatoes, peeled and cubed
  • 1 cup carrots, peeled and cubed
    ½ cup raw cashews (soaked in warm water for 20 minutes)
  • ½ cup plant milk
    Juice of half of a lemon (~1 tbsp)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp smoked paprika
  • 1 tsp sea salt
  • ½ tsp cumin
  • ⅛ tsp cayenne (optional, for an extra kick)
  • ½ - 1 jalapeno, deseeded and diced (adjust to desired spice level)
  • ½ tbsp coconut aminos

Instructions

Steam the potatoes and carrots until fork tender. Meanwhile, soak the cashews in warm water for 20 minutes.

Add all the ingredients into a high speed blender and blend until smooth and creamy!


Enjoy as a dip, sauce, or cheese topping!
