Vanilla Lemon Cookies

Ingredients

  • ½ cup oat flour
  • 1 cup blanched almond flour
  • 2 tbsp tapioca flour
  • ¼ tsp sea salt
  • 1 ½ tsp baking powder
  • 2 tbsp coconut sugar
  • ¼ cup maple syrup
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 vanilla beans (or 1 ½ tsp vanilla extract)

Instructions

Add the oat flour, almond flour, tapioca starch, salt, baking powder and coconut sugar to a bowl and mix. (Note: if you make your own oat flour, sift the flour to remove any larger pieces).

Add the lemon zest, maple syrup, and lemon juice and mix well until a dough forms and there are no clumps left.

Scrape the vanilla beans and add to the mixture. You can substitute with vanilla extract, but the vanilla flavor will not be as strong.

Place the batter in the fridge to chill for about an hour.
Preheat the oven to 350°F and line a pan with parchment paper.

Using a 1 ½” cookie scooper, drop 12 cookies onto the pan. (note: I flattened the cookies to help them spread since I live in a drier climate. This is optional).

Bake for 10-12 minutes until the edges of the cookies begin to turn golden brown.

Cool on the pan for 10 minutes.
