Healing Bread

Ingredients

  • 2 1/2 cups gluten-free oat flour
  • 1/2 cup millet flour
  • 3/4 cup brown rice flour
  • 11/2 cups tapioca starch
  • 3 tsps corn-free / aluminum-free baking powder (I
    use Hain or Gefen)
  • 1 tsp sea salt (optional)
  • 1/2 cup unsweetened applesauce (I use @edenfoods as it has only one ingredient - organic apples)
  • 4 tbsp aquafaba (the starchy water that's in a can or a jar of chickpeas/garbanzo beans...OR the cooking water if you prepare the chickpeas yourself)
  • 3 tbsp pure maple syrup
  • 1 2/3 cups filtered water

Instructions

In a large bowl, whisk together the gluten-free oat flour, the millet flour, the brown rice flour, the tapioca starch, the baking powder, and the salt. Set aside

In a separate bowl, whisk together the unsweetened applesauce, aquataba, maple syrup, and filtered water

Add the wet ingredients to the dry ingredients, and stir it all until you have a well-combined dough

Transfer the dough to a parchment paper-lined loaf pan

Bake for 1 hour and 10 mins at 375 degrees Fahrenheit / 190 degrees Celsius...or until an inserted toothpick comes out clean

Remove from oven, remove parchment paper, and allow the loaf to cool before slicing

Notes: It's a delicate recipe, make sure to follow ingredients exactly (add wet to dry). If using homemade applesauce, you might end up with a wetter apple sauce. The consistency of the dough is very important. If the dough is too runny, use less water. Start with 1 cup and see where the dough is at. Add more slowly as needed.
